Wassail is a winter holiday custom in my family. We make it in a crock pot over the course of at least twelve hours and use cranberry apple juice, orange, cinnamon, cloves, and occasionally spices. Given that the components are nearly equal, hot apple juice and one of these bags can be made in in about fifteen minutes (I don't believe the required five minutes adds much flavour). The lengthy version will continue to be a holiday standard, but now I can have a beautiful hot beverage without the fuss before night. One that goes beyond the water and artificial flavouring I previously used.

These are tempting and tasty. As a pastor, I host the December meeting of my church's leadership every year. I start this cooking in a big pot hours before the gathering. The alluring smell has already filled the premises by the time our church officers arrive. Our gathering's business element is seldom sustained for very long since everyone wants to drink mulled wine. I also believe that some individuals who are nominated to serve on our church's consistory do so because they have heard about the mulled wine in December. I always give these to my Japanese organist so she may present them to her family when she goes back to Japan. Despite the fact that I am unknown to her family, they all think highly of me.PS: Avoid making a special effort to purchase costly wine because the spices make it rich! I included a recipe card with instructions for creating Spiced Cranberry Apple Cider with each box of Cinnamon Orange spice. (In essence, you follow the instructions for apple cider on the box, but use Cranberry Apple juice in place of regular apple juice.) Yes, these "tea" bags are just what I need as I keep forgetting what spices to use from winter to winter. I recently made a pot of spiced hot wine, and it was delicious (I also added some cognac, sliced oranges, lemons, and grapefruit, along with a little sugar and wine). However, I think the next time I'll somewhat dilute the wine. To make it appear as though I worked hard on this dish, I later added some entire cinnamon, clove, and allspice sticks. As a result, when we poured the drinks, those tiny flecks of spice came out. I used one entire tea bag per bottle of wine, but since it is said to be possible, I might do so again in the future. All in all a success with the people we celebrated Christmas and New Year's with, it gives us something unique to look forward to in the winter. In the summer, we might also give it a shot in a sangria-like beverage.

The wassail beverage was first made available to me in a theme park. I've been hunting for a store that offers it or a suitable recipe to make my own ever since. I tried a few online recipes, but none of them came close to the flavor of the drink I was drinking. Typically, I don't enjoy readymade mixes. So when my sister suggested that we try this mixture, I was highly hesitant. Wow mouth explosion and belly goodness is all I have to say. I add ordinary apple juice to it. I also tried it with apple cider, but I couldn't really tell the difference. Although the recipe calls for two teaspoons of the mix per cup of juice, I prefer to add an additional teaspoon to my drink. This blend still seems to be lacking something. Although it doesn't quite match my memories of the beverage I drank at the theme park, it is quite near.

Around the holidays a few years ago, Whole Foods sold a tiny container of mulling spices that contained small pieces of orange peel and made hot apple cider incredibly lovely. The following year, I had trouble finding it, and I've been looking ever since. I decided this looked and sounded like what I was searching for after perusing a number of selections on Amazon, and I was right. This contains allspice, cinnamon, cloves, and orange peel.I filled a crockpot with a gallon of apple cider. I heated through around 1/4 C of the spices. You don't need to filter the spices with a tea ball or anything else. The orange peel chunks are pleasant to munch while sipping, and the pieces are large enough to be scooped off the top. This 1-pound bag has more more than I need, but I'll divide it up into small baggies and tie a ribbon around each one to give to guests at my New Year's Day brunch as a take-home gift.
