I did some investigation and found that the secret was sweet black soy sauce. I bought this brand because of the favorable ratings. It and all other brands are not available in my neighborhood grocery store.If you eat it directly out of the bottle, there is a tiny chemical aftertaste, as another reviewer pointed out. However, I discover that it cooks out and isn't in the dish after it's done. Although I haven't yet tried making pad see ew, I have used this to make a few stir fries. In addition, I quickly prepared a fantastic sauce/glaze for a beef alternative. Nothing else needs to be added if you combine this with liquid aminos (or simple soy sauce), since it perfectly balances the sweet flavor.I combined the liquid aminos, chili powder, smoked paprika, red pepper flakes, honey, ginger, garlic, sesame oil, a little peanut butter, and olive oil with the kecap manis to make the stir fry sauce. I have no idea what measurements I use because everything is done to taste. It will taste excellent on the food if it is delicious in the bowl! The sauce, scrambled eggs, and brown rice noodles are added after I stir-fry the vegetables. After a brief period of cooking and blending, I garnish with toasted sesame seeds and serve. This is definitely not authentic—I'm from the rural south of the United States—but it tastes great nonetheless! I combined the kecap manis, sriracha, and liquid aminos for the meat or meat substitute glaze. Again, it's all up to you. I'm done now. Under the broiler, it browned nicely and had a spicy, sweet flavor. Yum! almost had an Asian barbecue sauce flavor.The bottle is enormous. Therefore, if the cost seems high to you, it is. It should last me a while because I just use two tablespoons per stir-fry.Only the chemical aftertaste is the reason for my one-star deduction. I'm unsure of how healthy or natural it is for you.
