I was so relieved to find this after learning that I was allergic to almost all complex carbohydrates save rice and growing bored with all the different ways you can cook rice. I use it to create dumplings and cover meat (the secret is to pour boiling water over it and let it sit 10 minutes, then make the dumpling - good with basil and salt to flavour it). Yes, there is an Earth Fare 5 miles from my house. In an ideal world, I would go there, purchase my flour, and help out the neighborhood. But as we all know, things aren't perfect. I use a lot of this flour, and taking my kids to Earth Fare is about as fun as getting a Brazilian bikini wax (i.e., not a good time).Let's go on to the actual product. Anyone who has used rice flour in a recipe knows that it may give baked items a slightly grainy texture. The product is less grippy the finer the flour (usually). With this flour, I've baked berry cobbler, sugar cookies, chocolate chip cookies, almond cookies, and a vegetarian pot pie. The "grittiest" of these items were the cookies. The pot pie's crust was the least grittier; it was only extra-firm while remaining delectably buttery. When avoiding grains and nuts, expectations must be adjusted. The majority of my baking mix is made up of brown, white, and sweet white rice flour, but when I'm feeling crazy, I'll also occasionally add some tapioca and potato flour.As a result, this flour is arguably the greatest rice flour I have ever used for baking.
