I adore this blade. Cheap but excellent. I might even prefer it over the Victorinox model that I (and everyone else) purchased as a result of Cooks Illustrated's rave reviews. I have hands the size of 6.5 gloves and am quite petite. Compared to the larger Victorinox, this one works better for me. I haven't had to sharpen the blade because it is still razor sharp. have used it for six months, at least once every other day. As an added bonus, graphite hue looks amazing.I miss it now that we've moved this to our AirBnB rental home! It (and the pointed black one) have been misused by visitors for a year and remain flawless. I've never even had to sharpen it. I'm getting more of these after we finish remodeling!

Before reading a recent article titled "In Defense of Cheap Knives" on the SeriousEats website, I had never heard of the Kiwi brand of knife. I chose to conduct an experiment with the Kiwi and Dexter Russell brands after seeing mentions of them both in the post and the comments. The Victorinox Fibrox Handle 8" Chef's knife that ATK recommends has been my go-to knife for the past six years. It's a fantastic knife with a wonderful handle that sharpens easily. It's not too much; I paid roughly $30 for it. Sincere to say, these Kiwi knives don't feel "crazy cheap" right out of the box. Yes, they have half tangs, hardwood handles, and are incredibly light and sharp. The hardwood handle is finely crafted and feels smooth in the hand, although washing it definitely requires some caution to prevent splitting or cracking. Time and honing will tell, but for the typical home cook, this could be a really cost-effective knife.

The cutting edge is just sharp enough to cut through a sandwich without making me fear that one of my children will lop off a finger in the process, and it fits securely in my hand. However, let's be clear: you may still cut yourself. The spatula is the ideal size for everything from peanut butter to mayonnaise; it is wide enough to scoop up and spread a respectable dollop and small enough to fit easily inside the jar. Spreaders were a staple in my mother's home. Since we don't often keep fluff in the home, I made do with table knives and bought this as a joke item to include in a Fluffernutter kit I was preparing for my daughter for Christmas. These knives are exceptionally sharp, and if you use them properly, they will stay that way. I've now owned seven Kyocera knives. In addition to purchasing a set for myself, I also purchase Kyocera knives as presents for my kitchen workers. The best usage for them in a professional kitchen is to julienne lettuce. The lettuce won't oxidize due to the ceramic blade! These knives are also incredibly lightweight, which will decrease the typical hand tiredness experienced by those who cut, chop, and dice for extended periods of time.On tough foods like carrots or sweet potatoes, avoid using these knives (or any blades with a ceramic material). Chances are good that the blade will chip or shatter. Additionally, avoid dropping the knife since if it strikes a hard surface hard enough, it will break.These should not be used to butcher a whole bird or to cut up products containing bones. The ceramic blade will chip or nick if it touches bone, but it does not bend like a boning knife.In our kitchen, we prefer using these tiny ones for modest jobs like slicing whole olives, mushrooms, and strawberries.
