I normally cook standard pasta for 8 minutes to accomplish this; the Santa Ninfa takes closer to 11 minutes.A sizable pot must be used to prepare this pasta. The water begins to bubble up far higher than the water level and becomes fairly starchy. This is a sign of high quality, in my opinion, and I assume it is due to the manner the pasta is created. Porcini Trumpets was the Sfoglini pasta we had for the first time, and it was fantastic! Di Martino) without substantially sacrificing flavor or texture, which is typically the case when going organic. My go-to pasta shape to serve with a brown butter sauce is fusilli, and this is a great option for that.Here is a simple tutorial if you have never made brown butter sauce before:- A stick of butter should be heated over medium-high heat, stirring often, until it is melted and frothing. When it begins to foam, add 1–5 whole garlic cloves, crushed with the flat of a knife (depending on how much garlic you like; I do 5 or 6 myself), as well as a teaspoon or so of freshly ground black pepper and about 3/4 teaspoon of red pepper flakes (varies depending on your preference for red pepper flakes; mine are spicy, so I still like a heaping teaspoon, but I love heat!). Watch for the butter to turn a deep brown and stir it frequently. Finish cooking the pasta to al dente, reserving about a cup of the cooking water for the sauce, and remove the butter from the fire whenever it begins to smell toasty and somewhat "nutty" and has turned that gorgeous shade of brown. This will avoid the butter from overcooking and scorching. Then, add the pasta to the brown butter sauce and mix, adding 1/4 to 1 cup of pasta water as needed to produce a loose sauce.
