Give yourself some leeway when roasting for the first time in terms of when the chicken should be fully cooked. Even after cooking and accounting for no giblets, the 4.5 lb. chicken had as much meat as a much heavier store-bought chicken.I eat dark meat because I like a richer flavor in my chicken. For the kids who enjoy the milder flavor of white meat, there are plenty of breast.Even if it is as soft as a fryer, allow it a "rest" period of 5 to 10 minutes before carving. a significant change!This sauce is typical for red meat roasts, but I thought it went especially well with the "meatier" Marconda chicken. This is the most dependably tasty chicken I've found, and I purchase it for roasting. Because most of the drippings are fat-free liquid rather than gloppy fat, they are ideal for preparing gravy. Never slimy, the skin crisps wonderfully. The meat has a clear flavor and a great, meaty texture (not slimy). The Amazon price is less expensive than my local market, so I'm delighted not to have to pay for and discard components that I never use.

The BEST chicken I've tasted in years was this fresh organic chicken. It was, in fact. I paid only $5 for it when it was on sale; what a deal! I first removed the drumsticks and wings and fried them. Then, I sliced up the other parts of the bird to make cutlets, which were incredibly tender when I later cooked them. I made chicken soup with the remainder, including the liver, upper legs, and back, as well as some additional frozen components.
