The chiles arrived on schedule, and I am pleased as punch. Over the Labor Day weekend, I used them to prepare smoked beef barbacoa on my green egg. I employed them twice. 1) I roasted them, pounded them into a powder, then combined them with additional spices to rub a beef roast. I smoked the roast for three hours. 2) I then created a braise with softened chiles and other ingredients, boiled it down with seared oxtail, blended it, and then braised the smoked beef in it until it was as tender as butter. We tore it up and used homemade tortillas to make some tasty tacos. We utilized the braising liquid, which had a fantastic flavor, as a sauce for the pulled meat. Once again, many thanks; these are now my go-to dried chiles!

They are good and they arrived on time. I'm from the Southwest, where it should be possible to buy anchos in quantity in a bin at any grocery store, no matter how big or little. Alas, after moving to a rural county, I found out that this is not the case. The fact that Ole Mission sells on Amazon and that I can be rescued from a true "food desert" while I'm bugging out makes me very happy.In my home, anchos have always been a mainstay for a variety of sauces and stews. They pair especially well with red beans and rice. When the beans have softened, I simply split or tear up a few dried anchos, keeping the seeds that fall out in case I may plant some of them, and add them to the pot for a simmer along with the beans. It has a rich, distinctive, and filling flavor that doesn't require much ado to a meal. It's astonishing how much these peppers complement your favorite tofu preparations; give it a go some time pureed and boiled into a sauce for spicy tofu, yum. Nothing else can replicate their flavor; if you enjoy them, nothing else will do.For the thrifty: I tried some powdered (said to be) "ancho" powder from a mainstream firm that is also sold here just because it was inexpensive, but it was, at least to me, worthless as an ancho because it tasted nothing like them. It was the first time I had to leave a negative rating on a food item here. On the other hand, the Ole Mission product is precisely what it should be: whole chiles that are sweet, spicy, and delightful. Without a doubt, I'll return for more.

Not bad, but not as excellent as the locally produced goods in Progeso, Mexico.In the end, I made my own seasoning, which was quite easy to do and had a lot superior flavour. I went to a nearby Mexican grocery store and purchased three to four different packs of dried peppers. Since they weren't entirely dry, I baked them at 150 degrees for about 5 hours. I then crushed them into a fine powder using a crusher and pestle, including the skin and seeds. I next added a significant amount of salt that had been finely ground.There it was. Don't get me wrong, it has quite a kick, but it also has a much richer, smokeier flavor.
