As someone who grew up on one of the East's virtually extinct family farms, it is a delight to support a family farm that produces grains that are organic or on the verge of becoming such. The qualitative traits of some of their heritage grains are also taken into consideration. All good, but uncommon these days. The buckwheat was ground on May 14 and delivered by Priority Mail on May 26 in two secure bags. If the one pound bag won't be consumed within a few months, it can be frozen. What is there to complain about with a reputable Illinois family farm, premium buckwheat that has been finely ground, and a recipe for pancakes included? Fully endorsed.

Update: I've used this flour for well over a year, and it still works wonderfully!
