In my location, I was unable to locate any buckwheat flour. I chose to purchase the Haldeman Mills Light Buckwheat Flour after doing some research. Compared to most other larger bags, the size was more manageable.I was making a dessert with this flour.The flour arrived in a tight plastic bag with a handwritten letter inside, wrapped very carefully.I felt a sense of accomplishment knowing that this business is run and owned by a family.This stuff is fantastic all around. As someone who grew up on one of the East's virtually extinct family farms, it is a delight to support a family farm that produces grains that are organic or on the verge of becoming such. The qualitative traits of some of their heritage grains are also taken into consideration. All good, but uncommon these days. The buckwheat was ground on May 14 and delivered by Priority Mail on May 26 in two secure bags. If the one pound bag won't be consumed within a few months, it can be frozen. What is there to complain about with a reputable Illinois family farm, premium buckwheat that has been finely ground, and a recipe for pancakes included? Fully endorsed.

Update: I've used this flour for well over a year, and it still works wonderfully! Until a month ago, I kept it in the original bag down in a clear garbage bag, after which I transferred the remaining contents to an airtight container. Amazingly, though, it still bakes well and doesn't go bad (as often happens with quality flours). This business is GREAT!Light, healthy, and ideal. I really enjoy this flour. It produces a very outstanding soft crumb when combined with AP flour, significantly superior to what I could achieve with AP flour alone. And the people I serve aren't turned off by the hefty, dense, tasteless whole wheat goods that are common in households attempting to eat a little bit healthier. And I like that I know the business. That's fantastic! Additionally, even though my house can get heated at times (we live on an island), I've never had any issues with the flour "keeping" and not tasting rancid or odd.

My wife approves of the Uvelka Gretchka, and I truly like it (originally from CCCP). This brand has two advantages over competing ones: there are no stones and the skin is thinner. A serving amount of around 2/3 cup per person should be used, and you should add twice as much water, quickly bring it to a boil (covered), and then turn off the heat after a minute or so to let the water soak in. A semi-firm gretchka will result from this, which you can then season with either sugar and milk (some people enjoy that) or my personal preference of olive oil and chopped fresh tomatoes. I think that's it. We go through about one pack per week despite the size of these packets (5 people).

I recently started eating gluten-free, and I adore this food! I didn't know there was a type of light buckwheat flour. The Bob's buckwheat flour has been my go-to ingredient for the past six months. The majority of the recipes in the "Against the Grain" cookbook call for this flour. Most recipes work nicely with the flour. Additional tapioca starch and baking flour are required for some recipes, including those for the pizza crusts and lightly leavened breads. But that has nothing to do with the flour; it's only that I've never baked with gluten before.The flour has no grit and a very neutral flavor. I'm able to eat waffles once more! Yes, thank you, Lord! Nothing is worse than a dense, gluten-free waffle that is weighty and grittly. If only I could create a gluten-free version of the classic biscuit!
