This is the one to choose if you'd rather have something formed of countless small crystals that, when placed on the tongue, instantly melt into delicious sesame delight. It has a texture resembling a dessert called "divinity" that I've seen in the southern US. I'm unable to respond to the question of which type of halva is "genuine" since I'm not sure there is one. It is impossible for me to determine which version is "correct" because there are so many minor and significant variances from one place to another. Consider baklava, pad thai, wine, peanut brittle, kulfi, and other foods; there are as many different methods to prepare them as there are makers. But I do know that this fashion is by far my favorite. Unlike the strong, dark flavors some brands have, the sesame flavor is light and delicate. Although I'm sure not everyone will like this look, it's absolutely a favorite of mine!
