Duck fat is unexpectedly not terrible for you because it has a decent balance of Omega-3 and Omega-6 fatty acids and a low glycemic load, contrary to popular belief. Duck fat is a far healthier alternative to other cooking oils such as peanut or canola. It can be used in regular cooking, just like butter or any other oil. The distinctively delicious but not overpowering flavor that this imparts to any dish is an extra benefit. The fat is remarkably stable and may be reused after draining it off from whatever you were preparing. It will keep for at least six months in the refrigerator. However, if you do intend to reuse it, I advise first straining it through cheesecloth to get rid of any pieces of meat or other food. The fat will last longer and won't get rancid as a result. I always have a jar of it on hand for cooking, and I use it if I need to sautee or simmer something slowly, especially a long roast.Confit is one of my favorite uses for duck fat, and having a few extra ounces on hand makes it much easier to fill out the dish and make sure that whatever you're cooking is completely submerged for the best cooking results. Even if the cost might deter some people, keep in mind that you can reuse it and that it's healthier than many cooking oils.
