Steel seems to be reasonably priced.Then, I bought a Chinese chef's knife made of unbranded carbon steel from a used shop that had a comparable handle but was lighter and more balanced. It was VERY keen and held the edge well after minor rust was removed with expert sharpening. I was aware that I shouldn't store it wet or use it with acidic meals, yet it would rust as I was using it! As if I don't already have enough to worry about, TOO MUCH TROUBLE!My third purchase, and a wonderful compromise, was this knife. Good balance and weight, pleasant grip (although I think the old round design looks better), arrives sharp, and after professional sharpening is still quite sharp but not quite as keen as carbon steel. zero rustMy only gripe is that the knife's spine is not rounded and can be unpleasant when chopping for an extended period of time. The corners of the spine were dulled with medium grit sandpaper, and it is now incredibly comfy.
