A SLICER is a necessity, and a cool basement in a house in the Midwest is really helpful. I kept dried prosciutto that was 14 or 16 months old in my cellar for years, up until the old man passed away. His homemade salami and prosciutto did well in the neighborhood grocery stores run by families. I have many sharp knives, including butcher, bread, and butcher knives. Knives are not only utilized as weapons of defense in my culture (joke). Knives work well for prosciutto but won't cut it for "hard" dried speck (you'll get hurt). This speck was extremely hard and smokey, weighing up at 5,3 Lbs. Did I mention that the major livestock on the farm owned by my Grands was pigs? Three days after I let the Speck breathe in the homemade wine cellar, the smoke had almost completely disappeared. I therefore began to chop around 2 pounds (removing enough hard skin first) Everyone enjoyed it, some even loved it; after all, we are familiar with pork meat. Due to the Alto Adige distinction and the fact that the neighborhood deli no longer cuts meat, I bought this meat. So I enjoyed a few slices with my homemade 2016 Zinfandel and some rustic bread. One last thing to say The thin skin and some of the fat are frequently chopped up and cooked later to be added to spaghetti and other morning items. I'm positive I'll do it again. Some people inquired about storage, including where and how long it should last. Dried meat stores best in refrigerators and/or seasonal cool locations, NOT FREEZERS. I have air conditioning in my cellar since the wine only lasts, at most, six months in the refrigerator, depending on where you live. That won't be a problem, as this much speck will be gone by spring.

Despite being a healthy weight, I can hardly get two tiny little servings out of the package and am constantly wanting for more. To feed a family sandwiches with this would be costly. These ham slices are delicious at any time, but they're extra great because they adhere to the Whole30 diet. I prepare a chef salad by rolling up the slices of Applegate Natural Smoked Turkey Breast (https://www.amazon.com/gp/product/B001000JPA), slicing them crosswise, and adding hard-boiled eggs. Delicious!I'm not sure what led to the other bad reviews because I've been using this product for the past 18 months and I find it to be great. You won't be content if you're expecting thick, salty ham slices. This product will make you very happy if you're glad that there is organic ham available that doesn't contain nitrates or nitrites.
If the packaged ham is bad, you will notice an off odor, color, and/or texture. The ham may also be slimy to the touch. If you notice any of these signs, do not eat the ham.
