This sauce is a favorite of even my pickiest eater. I use the Pioneer Woman's enchilada recipe; I use La Victoria Green Chile Enchilada Sauce Mild mixed into a slurry of one tablespoon of oil and one tablespoon of flour, then a half box container of chicken broth. I know this is slightly different from her recipe; look up her recipe to be accurate for your tastes; I have adjusted for my family's tastes. For the little child, I place plain mild cheese within FLOUR shells. For the adult members of the family, I either add chicken, black beans, and cheese along with fresh cilantro and onions, or I substitute red meat (cooked ground beef or shredded roast) for the chicken. Without taking the time to make it myself, this is the closest thing I've found to real Green Chile sauce. fantastic flavor But keep in mind, this is a MILD sauce.
