I then prepared the turkey morning sausage for the burgers. I decided to lay the bottom half of the press with wax paper rather of plastic wrap because these are always a little bit more sticky at 80/20 than pork sausage or ground beef. I then formed 1.5-inch, 2-ounce balls and set them in the middle of each mold's wax paper. I then put another wax paper sheet over it and pressed firmly and evenly on the top of the press. The depth of the mold means that you can only press so deeply. The meat will flow out the sides if you try any harder, as it did with the first round of patties.Following completion of that, I pulled off the top piece of wax paper, picked up the mold and the bottom sheet of wax paper, and flipped the entire thing over onto my copper griddle surface. The patties' bottom wax paper layer came off with ease. The patties were then secured to the grill using the upper part of the press.Please keep the following in mind: 1. Try to place your meat mixture ball in the center of the mold cavity.3.
