I adore using this cinnamon to sprinkle over toast, oatmeal, or cereal. I still use the "conventional" ground cinnamon (Cassia) for baking even if it has a different flavor because that's what I'm used to. The flavor of "red hots" candy comes to mind when I eat ceylon cinnamon. No, it's not hot or spicy, but that kind of cinnamon flavor is what I'm referring to. I got it because I wanted to use cinnamon more frequently for its therapeutic properties after learning that eating too much of the Cassia variety might make you sick (lowering inflammation, keeping steadier blood glucose levels etc). So, in order to boost consumption without running the risk of consuming excessive amounts of the toxin cinnamaldehyde, I chose this Ceylon cinnamon. In general, I like the perfume and gentler flavor of this variety (Ceylon) over the stronger "typical" cinnamon (Cassia), which can be a little bitter on its own (which is why we add sugar to it, right?). Ignoring any boring health details. When you first smell or taste Ceylon, you'll notice right away that it's very different from Cassia—most notably, it's not at all bitter. I quite enjoy it, especially since I can put on as much as I like without getting that bitter flavor, and after using it for a while, this has become the new norm for my intended use (oatmeal, etc.). It's a brand-new essential in my pantry.

I did get the cinnamon sticks, and the same day I got them, I did reply to your email. If you didn't get my email with my question, I apologize. I had a query since I had received some of your cinnamon sticks that had mildew on them (the bark was a greenish tint). I wanted to know whether this was typical because the cinnamon sticks are organic. I won't be utilizing these cinnamon sticks in my cooking because I was unable to wash the mildew off of them.
