The Captain sends his greetings. Folks, I like spicy food, but not to the point where it bothers me for hours afterwards, and that doesn't seem to be an issue with this. I've never bought Chipotle powder before, and I really like it. Although overall it could be more distinguished by its smokey flavor, I do believe this has a genuine spicy kick to it, unlike some of the other evaluations. It surely isn't even close to being as mild as, say, cumin. I actually pulled it out of the kitchen thinking it was cumin earlier and was a little taken aback when I tasted it on my steamed chicken and vegetables:)Folks, I also appreciate that it is organic and is packaged in a glass shaker, which allays my slight worries about leeching. I'm going to experiment with this in my chili and guacamole recipes, and I can't wait to see what happens. I came into these while looking for a different place to get chipotles in bulk since, although I adore the ones from my local gourmet spice shop, they are prohibitively costly and I prepare and bottle my own spicy sauces, one of which is chipotle-based. These were a great substitute because they were quickly delivered, had wonderful smoke flavor and scent, and had the mild spice one would expect from a well-made chipotle pepper. This past weekend, I used them in two different dishes: a peach chipotle curry sauce that I adapted from a recipe I had never tried before, and the standard chipotle sauce that I have been preparing for a number of years. When we were camping, a friend mentioned aleppo pepper, so as soon as I got home, I looked it up and ordered some. Now, this pepper is my favourite. It did give me a mouth and lip burn when I tried it directly from the jar, but it wasn't very intense and didn't linger very long. I like not to have my taste receptors irritated when I eat pepper. Foods that have it added have a pleasant fruity heat. It is now a need to include in my chilli, and I use it on all things that call for a mild kick of heat! I frequently prepare southwest-style meals, and since so many canned components (water, salt, and food starch) are essentially garbage, I create things like enchilada sauce from scratch. These are the greatest brand of dried anchos I've discovered, and I use them frequently. They smell strongly of the earth, almost like bitter chocolate, and have a lovely leathery feel (if they are crispy dry, they are too stale).
