I discovered a fantastic recipe for "Chicken Bruschetta" on the back of the Stove-Top Stuffing mix package. Like many of my favorite recipes, it allowed me to use ingredients I already had in the kitchen to quickly prepare a filling family-sized casserole. In later versions, I replaced the diced tomatoes in the recipe with medium-heat Pace Salsa and the mozzarella with Pepper Jack cheese. It always turns out well whether I use canned chicken chunks or cubed chicken tenders.

I only typically purchase Stove Top Stuffing brand stuffing mix because it is my favorite. I generally buy the regular chicken stuffing mix, but I accidentally bought the low-sodium variety. The regular chicken and the low sodium chicken tasted the same to us. The difference might only be marginal if someone manufactured both of them for us to taste-test simultaneously. Don't be hesitant to try this low sodium version if you loved the original. According to the label, the difference appears to be 13% instead of 19%. This was just as good as the original, so I'll be buying both of them now (whichever one has the best price). P.S. Give the turkey taste a try; it's also delicious.
