For a few years, I've been using Kodiak Cakes Power Cakes pancake mix, and I adore it! I ultimately made the decision to test their Minute Muffins because I was aware that they had expanded to include additional breakfast goodies.I've tried both the blueberry and the apple cinnamon varieties of these, and I definitely favor the flavor and texture of the latter. I've experimented with several cooking durations and discovered that for my microwave, 55 seconds is ideal. Both behave similarly, rising to about the top of the cup before falling back to around the 2/3 level (the Apple Cinnamon is a bit higher, maybe 3/4). Neither of them resembles the photographs, which show the muffin's top rising past the cup's rim. So, there you go.I'm not sure if I should call these muffins. I have to eat it with a fork since they are difficult to remove from the cup (I still don't know how to do it without breaking it). In my opinion, that sort of disqualifies it from the category of "muffin."UPDATE! I discovered a method for removing one of these whole from the cup. Let it first almost totally cool (wait 10-15 minutes or so). Then, using a fork, enter the tines between the muffin and the cup along the side and remove; go over a little and insert the tines again and remove; don't use a knife because the muffin sticks to it; then, go around the cup twice to ensure that the majority of the side is separated from the cup. The cup should now be placed upside down on a plate (made of paper or not) and smacked a few times. The muffin ought to spill out the cup. At least you have a "muffin" rather than a "breakfast treat that you have to eat with a fork" even though it's still quite brittle.BUT they are undoubtedly both fluffy and delicious. The blueberry is a touch "gummy"—not horrendously, but just enough that it is apparent. Trying to increase the cook time only made the berry dense and gummy rather than light/fluffy and gummy. However, the Apple Cinnamon is almost flawless, most likely as a result of the addition of rolled oats, which give it some texture. After removing it from the microwave, I think that adding some butter gives it a little extra taste. I've also added some cinnamon sugar to the apple cinnamon.I recently added the Apple Cinnamon to my subscribe and save list, so I obviously like it. The texture makes the blueberry "just OK." Although I haven't tried the other varieties, I might try the chocolate Minute Muffins.
