Although there isn't much more to say about the Ravenger Cleaver/Butcher knife because the description pretty well covers everything, I will share my opinion with you. This Dalstrong Cleaver, in my opinion, is another another example of culinary art. Even though I knew it was 9", it is very large. However, as you touch it in your hands, it appears enormous in a good manner because it can handle almost anything. I used to exclusively purchase inexpensive knives, but Dalstrong convinced me to spend more money on higher quality. The delivery is amazing; it feels like a small surprise, similar to unpacking toys at Christmas. This cleaver feels fantastic in your hands and has a terrific weight. The blade is razor-sharp, cutting through bone with ease. I chop up a lot of chicken to feed to my dogs and it readily cuts through larger bones with just one motion. This knife is very excellent and is quite reasonably priced. It is well-made of high-quality materials and is well-designed for usage in a medium-sized household kitchen. It weighted 17 ounces net, which is a good weight for the kitchen in a home. Although it was already pretty sharp, I gave it a slight polish using a ceramic honing rod. I couldn't find the steel's hardness specified anywhere, but based on the type of stainless steel and how it sharpened, I'm assuming it's in the 56–57 region on the Rockwell hardness scale, which is appropriate for a knife of this kind. Using thin cardboard (a recycled USPS mailing box) and blue masking tape, I created a lovely cover/scabbard. Great results.

The explanations and images don't do it justice. In fact, I have a hatchet that weighs less than this.The knife, axe, or whatever it was came with a relatively dull blade, but after some time on my stone, it had a decent edge. Although the angle is somewhat steep, I don't mind because this is for cutting through bones and rinds rather than slicing tomatoes.Some reviews have cited handle issues, which I have not personally experienced. However, the blade is good and has a complete tang, so if I ever need to make a new handle, it won't be a large concern.It's so huge that using it actually exhausts you, but it's worth it. One thing to keep in mind is that this knife does not stop—for anything. * This includes the initial portion of a less expensive poly cutting board. If that worries you, look elsewhere—but not while using this knife, as you might lose a finger—because this knife will actually mock a finger (bone and all likely).In conclusion, get this if you ever find yourself wishing you had an axe in the kitchen. I had grown weary of using a dull knife to attempt to cut the ends off of corn on the cob. My knife seemed to have the wrong shape, even when it was sharp. I evaluated a number of butcher knives. There are a lot of them around. This one was reasonably priced and had positive reviews. It's neither the most expensive nor, most likely, the best. But I'll tell you what—it works. Corn can be cut easily. partly as a result of the knife's weight. And it has a razor-sharp edge. So much so that when my wife was putting it away while not paying attention, she cut her finger. Very sharp, with an ergonomic handle that is good for women's hands. However, the blade is incredibly stuck! While removing potatoes and taro off the blade is tedious, chopping them feels as simple as chopping tofu. The vegetables resemble fouling creatures that are sticky to the blade. Even my plastic cutting board is somewhat sticky to the knife, making it difficult to remove the knife from the board. I was initially tempted to return it, but I changed my mind after noticing how sharp it was. I'm accustomed to it now. Undoubtedly a good knife, especially for dicing, shredding, and cutting small bones.

I bought this cleaver to carve some ribs with. Not as sharp as I had anticipated, but a sharpening can fix that. It was packaged inside of a larger box along with some plastic edge protectors that were bubble-wrapped inside of a little cardboard sleeve. It came without damage. As long as your hands are not oily or damp, the grip is comfortable and won't slip. Cutting was simple after it had been honed. It is nicely balanced, yet not excessively so. It is a lovely cheap addition. cannot fail.3/22/16s**Update**Today, I sliced up some baby back ribs with this cleaver. It was initially harsh, but after going through the blade sharpener, it cut through raw chicken with ease and raw beef like it was warm butter. The cleaver was much better when the blade was sharpened. The best sharpener is the one that can be purchased from a big-box retailer. Make sure your fingers are cleared of the way after it has been sharpened.

Three brass rivets hold the wood firmly in place. As others have said, I intend to use a hammer and punch set to tighten the rivets if they grow loose. If I didn't succeed in that, I'd drill the rivets out and put machine screws in their place.I think the light reddish-tan stain that the wood has been polished with makes it look "cheap." (Reminds me of the stock color on an AK-47 clone Chinese SKS rifle.)Having said that, I am happy with my purchase and have a solution for the little problems (like the two nicks in the edge). I don't mind spending a little time customizing this when the prices are this low.

Make sure the food tray/guide isn't too much to the right when you construct it (near the blade). I erred by having it too much to the right, and the blade nicked it. I made a small adjustment to the left to make sure the blade clears it, and I haven't experienced any problems since.Make sure you overnight hard freeze your meat. Thinly sliced brisket, thick and thin slices of pork belly, and rib-eye steak for bul-gogi have all been prepared with technique. This slicer will produce paper-thin slices of meat if your meat is hard frozen (overnight or longer; the instructions advise 48 hours).Setting the blade is not too difficult.
