The ends are bright green in the middle and nice and white at the points. While I make the dough, I let them soak. Use hot-water dough, not cold-water dough, and layer it for excellent scallion pancakes. I apply a thin layer of sesame oil to the layers, which aids in producing a flaky pancake. I steam them first and then add them to the cooked potato as an addition. When we first ordered these shallots, two of the biggest shallots we had ever seen were in the bag!Each time we have previously ordered them, we have gotten 4-5 somewhat smaller shallots, about the size of a walnut.If you've never tasted a shallot, picture a hybrid of an onion and a garlic clove.
