To ensure that every mooncake is precisely the same size and proportions, it is crucial to weigh both the skin and the filling. Although the majority of recipes called for 30% skin and 70% filling, I discovered that a 50/50 ratio worked for me. I measured out 50 grams of filling and 50 grams of skin because the huge mold is marked as 100 grams. To precisely fill the mold's volume, it is hard to determine the exact weight of the materials. No issue! Simply press the finished, floured, skin-covered ball of filling into the mold, filling the side designs and ensuring the bottom is level. It's not necessary to completely fill the mold (or bottom). Lift the mold and carefully press the final mooncake out onto a clean surface after lightly pressing down on it.
