Due to its extremely low carb content compared to other pasta, especially whole wheat pasta, "Carb Nada" noodles have been a staple in my diet since I was diagnosed with type 2 diabetes.Although the Carb Nada noodles are decent, I actually prefer the flavor of Dreamfields, but I didn't buy any because I was terrified they would cause a severe blood sugar increase.I read that they only contain 5 grams of digestible carbohydrates, which I honestly thought was kind of a crock because they have 41 grams of total carbohydrates, 5 grams of fiber, and 31 grams of what they refer to as "protected carbohydrates," leaving 5 grams of digestible carbohydrates. However, when my local grocery store started carrying this brand, I decided to give it a try.HOORAY! They are being completely honest! Despite the fact that these do raise my blood sugar, it does so much less so than traditional pasta and is comparable to Carb Nada.These noodles have a better texture and flavor in my opinion than Carb Nada, which only comes in large, flat noodles with no elbow or spaghetti shapes. I'll use up my Carb Nada noodles (the wide, flat shape is ideal for soups, and they actually taste really nice), but we're switching to Dreamfields because it's both simpler to locate and less expensive.I should point out that a man in my support group for people with diabetes claimed that these noodles didn't work for him. Ingredients: Water and 100% organic durum wheat semolina. includes gluten. no GMOs. Italy-based company Fine Italian Food, Naperville, Illinois, is the distributor. by ICEA, organic certification. Date of batch expiration: 7/26/20. Avoid using enriched flour. The processing of enriched flour is excessive. The vitamins (Niacin, reduced iron, and thiamine mononitrate) have to be replaced since they overprocess it to the point that it is no longer truly durum wheat semolina. Vitamins are unregulated, and many of them are synthetic rather than natural today. Many people are allergic to thiamine mononitrate, a synthetic form of the vitamin. These synthetic phony vitamins are generating billions of dollars for the vitamin industry. I don't eat any enhanced flour at all. A Frankenstein food developed by the vitamin and corporate food industries. Pastas made with enriched flour are abhorrent. They are putting it in breads, chow mein noodles, and other foods. Similar to the new HFCS, shoddy waste. I would definitely buy this pasta again.
