After years of baking bread, I finally caved and bought this banneton (after reading many reviews) and a pricey, beveled bench knife with a cutting edge. My very first loaf with a banneton is this one (no sticking; I followed enclosed directions). I'm delighted I bought the 9-inch banneton. Both extremely small and larger loaves can be baked with it. The Sunny Sourdough recipe from Teresa L. Greenway was used to make the bread in this photo, which was baked in a cast iron Dutch oven with paper. Like the banneton a lot, especially the way it softly dries the dough's outside while it's being proofed (helps hold the shape it seems). I'm not sure why I held off so long. I suppose the tales of care and mold etc. delayed me. I lightly sprayed the inside of the banneton with water before dusting it with a mixture of half AP flour and half rice flour for the first time. Prior to the first loaf proof, I thoroughly coated the banneton with this same flour mixture. To prevent the top of the dough from drying out during proofing, I only cover the top of the banneton with plastic (not the sides). I proof in the fridge as well. Highly advised.

Since I've been utilizing this kit's components virtually every day for two weeks, I've been happy with everything in it. The liners are constructed of a thick cloth that fits the baskets properly, and the baskets are very well made (indistinguishable from ones I saw at restaurant supply stores and Sur la Table). I've used the baskets both with and without the liners, always with a generous sprinkle of rice flour, and neither method has caused any problems with the release of my sticky sourdough breads. I was pleased with the "extra things" considering the price. The lame comes with extra blades (I think there are 5), a small leather pouch for storage, and a lovely hardwood handle that slightly curls the double-edged blade at the base of the stick. The plastic and handled dough scrapers work just well and are identical to the ones I already have in my kitchen. A great kit for the money. Given its high caliber, I might even think about giving it as a gift in the future to someone who is considering starting to bake bread.

This has been a bit of a learning experience for me because I've never used a banneton before. Unless you want to prevent your dough from having a wonderful pattern, you don't need the fabric cover. The dough's seam side is placed up in the banneton after the first proof (which demonstrates that the yeast is active) and shaping. If you want the semolina to stick better, briefly moisten the banneton before sprinkling it, and then drop in your shaped dough. Don't forget to preheat your oven and baking stone before beginning the second part of the banneton proof. You can empty the contents of the banneton onto a piece of parchment paper or aluminum foil on your work area after the second rise is complete, then shave the dough. If you used enough semolina, the completed dough will be simple to remove from the banneton. Cover the dough that has been proofed with a deep dish roasting pan or aluminum pan and place parchment paper or aluminum foil directly on the baking stone in the oven. For the first 20 minutes of baking, it functions like a dutch oven to maintain the natural steam. After that, remove the pan and wait the final 15 to 20 minutes for the crust to form. Brush the inside of the banneton with a toothbrush after letting it thoroughly dry by air. The banneton is left flawless for the subsequent use and it collects everything. Have fun baking!

The dough scraper and lame are excellent extras, but I really just got this set for the towels and linens. The lame first appeared to be quite inexpensive, yet that doesn't affect its capacity to score. Since then, despite having a dough scraper of my own, I have used it frequently. Regarding the linens and bannetons, although this is my first set, they appear to be of great quality and performed flawlessly. I used rice flour to dust the interiors before proofing two sourdough loaves, and they turned out flawlessly with no sticking at all. After that, I was able to remove all the extra flour with ease and no residue by using a simple paintbrush that I normally use for cleaning flour (like on my pasta roller). finished off my baking adventure.

Having these proving baskets has made my process of preparing sourdough bread so much more enjoyable. Two sourdough cinnamon cranberry-walnut loaves of bread have already been made with them. I was able to divide the dough into two loaves thanks to the two baskets, and I now have one extra to freeze. The baskets include a layer that resembles linen. I skipped the initial wash. Just after thoroughly flouring it, I added the dough. The dough came out easily without sticking after proofing. I let the liner dry before shaking the extra flour out of it since the liner absorbs some of the moisture in the dough. I questioned why my sourdough crust hadn't always been so fantastic and why I hadn't been able to score the tough dough exterior before baking.
