All of my bread is baked by myself, and the majority of it is an artisan bread with a tough crust.The nicest bread knife my darling wife and I have ever used is this 10" Victornox. Even the toughest bottom crusts of artisan bread baked in a brick oven are easily sliced through by it.My charming Japanese wife, who is only 100 pounds when wet, struggled greatly to cut through the tough bottom crusts of artisan bread. She used to slowly take up the entire loaf and tilt it sideways in the air. saw through the crust at the bottom. This metal, which has a medium hardness, is also utilized in surgical equipment. Really not expensive; inexpensive by any measure, yet not of low quality.With my knives, I use a butcher-style sharpening steel. You only truly need to perform this maintenance task. Naturally, I don't cut on my countertops; instead, I use a cheap resin-type butcher board made of food-grade plastic. I don't need to be able to show off my pricey butcher block or kitchen knife.And yet, I take good care of my blades. I'm unable to comment on those incredibly pricey blades, but all I can say is that they will ultimately go dull.I will eventually have to buy a sharpening stone, but I'm not there yet. No other bread knife I've used has been as buttery smooth at slicing all different kinds of breads, from the softest white bread to the crustiest hard shells.In addition to slicing bread, it can also slice tomatoes, semi-frozen meat, and even meat that has been entirely frozen without squeezing out all the juice (don't use completely frozen meat, it probably won't work and you risk damaging the blade). This lame is quite durable. When you grip it, it feels sturdy and ergonomically weighted. The lame is tucked away in a foam bed inside a safety case. The case's sliding top is designed like a sleeve. No matter how much you drop the case, it won't ever come out. The manufacturer's name is written on the box's cover before the entire case is put inside. I keep it close to where I score most of my bread. I appreciate that it also comes with extra blades to swap out the one that is already attached. For stability, it has two bumps that line up with holes in the blade's flat surface and is screwed to the blade at its center. To reveal the edges of the opposing corners, simply spin the blade. The opposing corners are merely curved upward to form a U shape, which is then rotated and allowed to return to its original position after just having been turned 180 degrees. The lame is definitely worth the price. You're not only purchasing a dreck. You're investing in a rating system. This knife is almost as good as the Ictorinox Fibrox for the price. The pickup truck of knives, if you need one with which you won't ever have to be concerned, is this one. The Mercer handle facilitates a proper grip even more than the fibrox handle, which doesn't have any bumps on it.The grind is the sole significant distinction between these blades. The Victorinox features a lovely convex grind with a thin back edge that never wedges. Like practically every house knife in a professional kitchen, the Mercer has a hollow ground. Although it undoubtedly wedges in cuts more quickly than a Swiss knife, it is still fully functional.If you are a home cook who only plans to use one knife and never plans to sharpen it, you might want to consider a MAC. The Mercer lines are the best bargain for good steel with outstanding ergonomics with great performance and the ideal package for commercial use if you know that German steel needs honing and how to do it. This knife is quite affordable and may be sharpened if the hollow grounding is not to your liking.In the end, I don't think there is any functional difference between this and the Victorinox. Culinary schools employ these because of their benefits. Four of these knives or a decent honing steel, a bread knife, and a serrated knife to complete a set could be purchased for the price of one fibrox. I've purchased more to give as presents. This is the pickup truck of knives, and it's ideal for any situation in which a Japanese knife's fragility would be a concern.

The loaves my wife has been baking have been the perfect size for scoring with this. She has been using it for a long and gave me one of those wary looks when I asked if I may try it. Don't take it personally if your wife jerks her arm back as you reach for the lame she has in her palm. She simply doesn't want you to ruin her creation. Like when you're working on that lovely outdoor deck and you draw a chalk line to designate where to cut the 5/4 deck boards equally or where to cut the rafters' tails using a level, and then she comes out and uses your circular saw to cut everything you just marked. "No," "no," "no," "no." That won't take place. You would be prepared to unplug the saw and flee with it. I adore my wife, but there is a line you must draw. So I understand. It's not very difficult to understand that you need to have a psychology degree. Anyway, returning to the lame thing I was writing so vehemently about My wife has been quite happy with this well-made equipment. One of the best knives I've ever used; excellent. This knife is excellent not only for the price but also overall. This includes more expensive models like Wusthof, Henckels, and Sabatier.The one issue I have, which applies to all ceramic knives, is that if you use a rocking slice or chop motion on a wooden or plastic cutting board, the knife will sever the board, which will cause the blade to chip when you walk it over to the next slice. Very little chips that don't seem to have an impact on the knife's ability to cut, but where do the chips go? How much worse will it get if you continue to use it this way? Knives made of metal don't have this issue.Having said that, Cuisinart provides excellent customer service and an excellent guarantee. So they will take care of you if it does get seriously chipped. But bear in mind that, as with anything, there are advantages (particularly sharp, effective knife) and disadvantages (chipping).
